Let’s talk comfort food, shall we? Sometimes you just need a little nibble to get you through some stressful situations, and sometimes that little nibble needs to contain all the things that make your soul feel a little warmer, a little more coddled, if you will. When I think of warming and comforting, my mind immediately wanders to the lovely rhizome ginger. It helps colds, settles tummy aches and nausea, and sometimes it makes for the perfect addition to a simple cookie. Yesterday evening, my husband and I had quite a scare as out littlest one tumbled down our steep flight of city steps (hard hard wood that’s not the most gentle on teeny tiny noggins), thankfully only leaving a few loose teeth, a bunch of bruises and a little blood, but it left every single person in our house shaken up.

We snuggled for hours, thanked our lucky stars, and then we all fell hard and fast to sleep. When my little girl awoke, all bleary eyed, bumped, bruised and broken, she only had one request: cookies.

So, I went to work.Since her little front toofers were aching, I knew they had to be super soft cookies.

These cookies are one of my favorites, and of course the little ones adore them too. They are a favorite around the Kramer household because they smell very fragrant while they cook (which lingers in your kitchen well after they are done baking), and once they cool, the cookies have anirresistiblysoft texture that almost dissolves on the tongue with a crispy crunchy sugary coated outside. In other words, these are perfect comfort food for sad little tumblers.

Soft and Spicy Ginger Cookies – Vegan and Gluten-Free

  • 1 cup sorghum flour
  • 3/4 cup superfine brown rice flour
  • 1/2 cup potato starch
  • 2 tablespoons sweet white rice flour
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoons cloves
  • 1/2 cup slightly softened vegan margarine
  • 3/4 cups organic sugar
  • 2 teaspoons fresh grated ginger
  • 1/3 cup molasses
  • 1 tablespoon flaxseed meal mixed with 2 tablespoons water
  • Additional sugar for rolling

Preheat the oven 350°F.

In a medium sized bowl whisk together the sorghum flour, superfine brown rice flour, potato starch, sweet white rice flour, xanthan gum, salt, baking soda, cinnamon, and cloves. Set aside.

In a large bowl cream together the margarine and sugar until smooth. Add in the ginger, molasses, and prepared flaxseed meal and mix until creamy. Gradually incoporate the flour mixture into the sugar mixture just until a fairly stiff dough forms.

Roll the dough into walnut sized balls and then roll into the additional sugar to coat. Place on an ungreased cookie sheet at least 2 inches apart and flatten slightly with a spoon (just until about 3/4 of an inch thick).

Bake in oven at 350 ºF for 11 minutes. Let cool additional 10 minutes before transferring to a wire rack. Cool completely before serving.

Share with a loved one to brighten up their day.

    aw… poor little girl… I’m so glad she’s ok!
    I’m totally with you, ginger is one of my favorites for feeling warm and cozy, and I LOVE ginger cookies! I adore that you put fresh ginger in them, I usually use ground in baking but always consider using fresh for an extra punch. So you’re motivating me to get around to it!
    This recipe looks wonderful Allyson, your little gal is lucky to enjoy these :)

    Oh no! I’m so glad she’s okay, but what a scary thing for her (and you!). I remember when we were very little, my brother rode his Hot Wheels right down the basem*nt steps. Thankfully he wasn’t badly hurt, but just like you, my mother got to work making him feel better with food. In his case it was mac-and-cheese, but the concept is exactly the same.

    These cookies look so, so good– I’m a sucker for spicy gingerbread cookies rolled in sugar. I can’t wait to give them a try!

    Ooh. Poor baby. I’m so glad she’s all right. I tumbled down an entire flight of stairs holding two empty milk bottles when I was a couple of years older than little bit. I still have the scar to prove it. I knew someone needed soft ginger cookies yesterday because I made the same thing only with bits of candied ginger and no xanthan gum. Yes, I really, really detest that stuff. Anyway, now I have a recipe I don’t have to substitute everything all over the place for so I shall have to make some more! My favorite cookie ever, especially as I don’t have to share, hehe.

      Oh goodness, milk jars! ouch! thankfully she was only carrying a handful of legos (and they flew EVERYWHERE) when this happened, so you are one tough cookie, and I’m so glad you were okay too. The addition of candied ginger bits sounds just perfect. Will be adding to my next batch, absolutely.

    Oh no! I took a big fall once when I was younger. A friend’s parents were remodeling their porch, and not knowing that it wasn’t there I opened the door, ran out, and fell a few feet to the ground. My front teeth went through my lip! I still have the scar. At least she will be better soon! The scare is the worst part.
