The Best Peach Pie Recipe : Room for Tuesday Blog (1)Yesterday I shared phase one of our basem*nt / media room makeover and we’ve definitely been spending more time down there since finishing it! Is there anything better than eating a big slice of pie on a comfy couch in a pretty room to welcome fall? I’d have to say no! The peach tree in our backyard (a happy surprise) is blowing up right now and I’ve been trying to use peaches in as many recipes as possible. We’ll be entertaining a few times this season, so I’m trying to nail down the best recipes. You’ll also notice a couple new additions in the basem*nt since I photographed it. The Best Peach Pie Recipe : Room for Tuesday Blog (2)Aside from the perfect weather and color palette that accompanies fall, my favorite part of the season is entertaining. It’s the time of year where we most often welcome friends and family into our home. It also incentivizes me to make our house feel more cozy and inviting- and I do my best baking this time of year! Who doesn’t want to be welcomed with the scent of freshly baked pie floating through the air? Emmett is always on board to be my taste tester! I started in the backyard to gather up some fresh peaches…

INGREDIENTS
  • 2 pie crusts- or your favorite homemade option (I bought frozen crust this time around to save time)
  • 8-10 ripe peaches, peeled
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 4 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • pinch of sea salt

The Best Peach Pie Recipe : Room for Tuesday Blog (4)Begin by prepping your pie crust. As I mentioned, to save time- I bought frozen crust this time around (no shame in my game)! I still roll it out and treat it like homemade dough though. I rolled the dough, draped this gorgeous scalloped pie pan, then moved it the fridge while I worked on peeling the peaches.

The Best Peach Pie Recipe : Room for Tuesday Blog (5)Peel the peaches and slice them into 1/4″ pieces for the pie filling. You can do more or less depending on the size of your pie pan.

The Best Peach Pie Recipe : Room for Tuesday Blog (6)Next, mix up the filling! Add the granulated sugar, brown sugar, cornstarch, salt, cinnamon, nutmeg, and lemon juice to the bowl of peaches.

The Best Peach Pie Recipe : Room for Tuesday Blog (7)There is just something about cinnamon and nutmeg that tastes like fall. Sometimes I add a little extra for good measure. Remember my spice rack DIY? It’s coming in very handy!

The Best Peach Pie Recipe : Room for Tuesday Blog (8)Once your filling is well mixed, pull the prepared pie crust from the fridge and spoon in the peach filling using a slotted spoon. If there is one thing that ruins a fruit pie- it’s a soggy bottom. Using a slotted spoon helps minimize soggy crust! Trust me.

The Best Peach Pie Recipe : Room for Tuesday Blog (9)Now for the fun part… the lattice top! This isn’t necessary, but I love getting creative with the pie top. This time, I opted for a thin lattice center with a braid around the perimeter, as shown in the intro image. I had some extra dough leftover, so I also cut out some leaves for fall. I’d recommend cutting your dough with a pizza cutter- it’s the easiest way to get straight, clean lines!

The Best Peach Pie Recipe : Room for Tuesday Blog (10)Bake the pie at 400 degrees for 15-20 minutes, or until the crust looks golden brown. If your pie isn’t baking evenly- you can shape foil around the edges to deflect the heat. I never have to do that when using this stoneware baking dish.

The Best Peach Pie Recipe : Room for Tuesday Blog (11)I prefer to serve my peach pie with a scoop of french vanilla ice cream! It really is the best dessert for early fall. It sounds like pretty much everyone is having an incredible peach season right now! If you also want to use them up or take advantage of fresh peaches in your area, I’d highly recommend this recipe. It’s great for fall entertaining and I’m definitely planning to make it again.

If you’re wondering about the new items in the basem*nt living room, I found this gorgeous marble side table from Walmart Home, as well as the navy channel tufted pillow. You can’t be the price! For a $14 pillow, I’m thinking I might order another one. I love the velvet texture that picks up on our acoustic wall panels! It’s like it was made for this monochromatic space. If you’re also feeling the fall vibes, I found a bunch of warm-toned copper accents, wood items, fall harvest decor, and tons of textural items on the Walmart Home site.

The Best Peach Pie Recipe : Room for Tuesday Blog (14)Let me know if you try the pie, and GIANT thank you for all the love yesterday! It was so fun to share the basem*nt reveal… even if it’s just phase one. Who knows when we’ll actually renovate down there- it could be years, so having a space that feels more like us in the meantime has been wonderful. Happy Tuesday, friends!
