1 cup potato cubes
2 tbsp ghee
2 bay leaves (tejpatta)
1 cinnamon (dalchini) stick
2 cloves (laung / lavang)
2 cardamoms (elaichi)
1 tsp nigella seeds (kalonji)
1/2 tsp mustard seeds ( rai / sarson)
1/2 tsp fenugreek (methi) seeds
1/2 cup chopped tomatoes
2 tbsp curd (dahi)
1/4 tsp asafoetida (hing)
1 tsp chilli powder
2 tsp coriander-cumin seeds (dhania-jeera) powder
1/4 tsp turmeric powder (haldi)
salt to taste
1/2 tsp dried mango powder (amchur)
1/2 tsp sugar

- Sauté on a medium flame for 1 minute.
- Add1/2 cupchopped tomatoes.
- Add1/4 tspasafoetida (hing).
- Cook on a medium flame for 1 minutes, while stirring occasionally.
- Add1 cupred pumpkin (bhopla / kaddu) cubes.
- Add1 cuppotato cubes.
- Add2 tbspcurds (dahi).
- Add1 tspchilli powder.
- Add2 tspcoriander-cumin seeds (dhania-jeera) powder.
- Add1/4 tspturmeric powder (haldi).
- Add salt to taste. We added 1/2 tsp salt.
- Add 3/4th cup water.
- Mix well.
- Cover and cook on a medium flame for 10minutes or till the vegetables are cooked.
- Vegetables after cooking.
- Add1/2 tspdried mango powder (amchur).
- Add1/2 tspsugar.
- Mix well.
- Cook on a medium flame for 1 minute, while stirring occasionally.
